Are y'all talking about that Chinook universal that has the 'c' shaped clip that you slide after you press the button? The one that takes two hands?

This one. They are increasingly used at windsurfing resorts, where the speed with which staff can swap out rigs translates into money.

Chinook 2-bolt is on all my boards as well, super strong & reliable, super easy usually, but it can be cranky. Getting that "C" clip to move can be difficult if it gets sandy, or there's any load on it, such as a bend in the uni. You could break a nail!

P.S. You can buy more bottom plates than unis. You buy one full set-up, then as many additional bottom plates as you have boards. You can then move the uni from board to board in seconds (as in 5 seconds).
