The OP might wanna check out the "Wing Sails a Reality Now" thread also.
Not say'n that works (still pretty skeptical myself) but if it does, it sorta
answers the OPs question.

Sure! That post (a bizarre blatant commercial) describes a 6.5 wing sail with the claimed range of use of 12 to 40 knots (with no reefing!).
I am sure it can be used not only for slalom and speed, but also for freestyle and waves, not to mention beginners and foiling, and with a little effort course racing. It erases in one shot the whole sail industry. One sail conquers it all!!!!!
BTW, to answer the OP: the list of windsurf styles above (slalom, speed, ... ) is the main reason why we have different sails. A sail used in waves will not work for a 50 knots speed run at Luderitz. And sailboats can use reefs, we cannot (Multi-sails tried a couple decades ago). Having said that sometimes I wonder if we really need the choice between 2 or 3 or 4 or 5 battens wave sails ...

Not true. My wife's Laser has full, radial and 4.7 sails plus bottom spars for each of those.

To the OP.
You need, or it’s desirebale to have the smallest sail that compliments your smallest board. The largest sail to compliment the largest board.
If you have only one board, it’s numerically simple.
After that the sail quiver gets multi.
If you have specialized interest , as freestyle, formula it becomes even more so.
One could take up golf, and play with a putter, a driver and some Other club, I dont golf, its too exciting for me to drive around in those go carts .

Not much to translate. There are three sails: full, radial and 4.7. First is around 7 sq. m, second is about 6 and 4.7 is 4.7sq.m
Each of those needs a separate bottom section (spar) of the mast. Top spar is the same. Total 3 sails and 3+1 spars.
