Why do windsurfing board have grit on top vs wax like a surfboard?

because "grit" is better grip than wax, surfers can't use it or it would ruin their wetsuit or body after one session.

Because windsurfers are tougher than surfer wusses who are known to have soft, pruny skin from all that time sitting in the water.

The grit is definitely better but you can use surf wax. Surf wax comes in handy when you realize that your grit surface is wearing out, but you need to thoroughly clean it off before reapplying the gritty stuff.
