I bought an old (2007) Simmer x-type 5,9 (430/21) sail. I wonder if it's possible (wise) to rig it with Gaastra 30 430 mast?

Should be fine.
Simmers are mast tolerant.
Gaastra's are close enough to CC.
Put it together, come close to specs, and LOOK AT IT! Post vid if you're not sure, or have a shop emp or good windsurfer look at it.

Most CC masts can work on any sail designed for CC.
There are several variances of CC masts, but all are quite similar compared to a true FLEX TOP.
Adjusting down and out, after initial specs are rigged, can give almost perfect performance.
X-types like downhaul till the 3rd batten loosens, doesn't respond well to wind specific tuning on downhaul, and does like outhaul tuning for specific winds.
