If this gear is going to be "dedicated" gorge gear, doesn't hurt to get something designed for Gorge sailing. Have had very good luck with Realwinds. The carbon surf line is more B&J, the Fish line is a bit wavier. Both have optional 3-fin setups that work well. We have a couple of each, and they have good range.
They come up occasionally in local shops and FS ads. Worth checking out.

FWIW, I use the same board for everything. Hookipa, the Gorge, the coast etc
It's fast and turns great. Planes quick and is versatile. 3.4-5.0, underpowered or overpowered. I like to keep it simple and it works well for me.
74 liter tri fin or single fin.
A good "wave" board works great in the gorge and a good "gorge" board works great at Hookipa. A good board is a good board and should work in a variety of conditions.
Just my two cents.

I'm using a custom Quatro with the fast rocker line and I'm about 150lbs wet.

Though I'm not quite the sailor Sean is, I'm 190lbs and sail a similar board in the 80-85ltr range. Used to be a Quatro Thruster 82, now a Goya One 85. For me both work well from powered up 3.7 to marginal 5.3.

This 85L Real Wind Carbon Surflite 261cm has a proven effective shape for defeating Gorge chop and enjoying medium swell in light to moderate wind. The side fins are tiny (as they should be) but still help for upwind beats and slower (desirable!) swell rides. With winds at about 30mph wind, it will be too big and bouncy for all but the heavyweights.

There's a pretty good condition RW Wave 256, the white and gray one, for sale at Delta Windsurf Co. for 100 bucks, with Meritex fin. Check it out.

There were several RWs at the last Gorge swap meet. Unless they sold, they should be at the next one, too, as some of them were in the CGWA fleet.

Finally found a 2010 85 litre Fanatic Freewave from Bart at the Gorge Surf Shop in new condition and is awesome. Turny, fast to plane and enough float to get back when the wind dies

I'd still go for a RRWave, wider tail, flatter rocker, really turny.
