I'm 190lb (85kg), maybe a bit more with wetsuit and lifejacket.
Board is 220l and also a 160litre.
Average wind range when I go out is 8-15kts with some days gusting to 25kts.
I think the best sail size for this is something like a 7.2-7.5

I have a 8,5, 7.5, 6.5, and a 5.0
I find I never need to use my 5.0. Wondering if I should keep it though for either a smaller board or maybe for my son/wife to learn (much lighter weights).
Seems like a 5.0 would only be useful from 25-30kts?

Only you can answer that question.

I'm a little bigger than you and I would never want to be without a sail in the low 5's (or low 4's for that matter). But your are pretty much correct about the wind range for a typical 5.0. It will take a solid 20 kts to be powered up consistently and mid-20's would be the sweet spot. If you don't expect to ever sail in those conditions, I guess there's no reason to keep it, but you know for sure, it's going to blow a solid 25 the weekend after you sell it.....

I agree with Bredtoshred. I'm 205 lbs and wouldn't be without a sail in that range (although I do sail somethings in 20+mph winds). In addition to teaching, you can use that sail yourself to practice sail-handling for new moves (duck tack, heli-tack, back-winding, etc.) that you could potentially even use on your bigger sails.

Like Brian said, your 5.0 is perfect for freestyle on light-wind days (sail 180s, backwinded sailing, heli-tack, switch-stance, etc.), it'll really improve your sail handling skills.

You may also come to love that sail on very windy days as you progress.

I would think long and hard before getting rid of that 5.0.

I weigh 185 lbs , so very close. In 25-30 Knots I'm using a 4.2.

You should keep your 5.0.
