I'm an experienced sailor in Florida. I'm 210 pounds, and currently use a 170-liter 89cm wide board as my light wind board. At 265 pounds with Florida light wind I would say plenty of 180+ liter boards are keepers past the novice stages. I also have a Kona (Step One), which I also like for its range of use.
In addition to Tinho at Calema here are some other suggestions for FL. If he has time to travel around the state, there are some great options.
With locations in Daytona and Miami, Steve Gottlieb of Sandy Point Progressive Sports is the largest windsurf retailer in the Southeast US:

In Miami, Ovidio Deleon of Sailboards Miami has provided rentals and lessons since 1982. Also there may be a swap meet in Miami coming up and he would be the person to ask about it.

In Ft Myers, Roy Massey of Ace Performer has rentals and gives lessons. Here is one of his ads:

In St. Petersburg, Britt Viehman of North Beach Windsurfing has rentals and gives lessons:

And right in Stuart, the Causeway is a great flat water venue and many "older" people (like me) sail there. And Jon Plaster hangs out there daily with his RV and trailer full of gear for sale, and he gives lessons. Here is one if his ads:
