Yep, end plating should be less lossy, but getting the COE of the sail over the fin, should help more, and that depends on the sail, how high your boom is, and where your mast foot is on the board.

Frankly I'm not a big end plating fan. I'd use it if it was working and I
was drag racing.

Realistically speaking for the average sailor, the end plating of the sail and its advantages is more of a light wind thing using larger slalom or freeride sails where the foot of the sail is quite large and structured with more battens and shape, particularly moving to windward on a close reach.

Overall, I'm with windward1 in finding that there is often a bit more speed possible closing the gap.

I have a couple Cheetahs too and that's what I thought, just wasn't sure.
