Lucaro - To finish answering your question I should add that, at least at my weight, I rarely need more sail, but might expend a more effort to pump up at the lighter end...because the stall speed is a couple knots higher. But the GW runs a couple knots faster, so you'll have more apparent wind at speed to keep it going. That said, the smaller, faster wing is much more controllable than the 76 when fully powered and/or with bigger sails. Soooo...either way, rider's choice.
The 683 is ideal for riders who want to go a little (not a lot) faster and turn a lot more. But it also goes up and down wind very well. I easily beat most of my buddies who are on I76...as most of them are. And not because I'm a better rider than them! It just works better.

Yeah, lower drag accounts for something.
I get the same impression going from a 1220sq.cm. front wing to a 600.
Same overall range, a bit more on top and a bit less at the very bottom.
No sail change needed.

Flipping the sail. Need to really get the sail moving through the flip to keep speed. Started shoving the sail across. In his foil academy jibe class Tony reaches underneath the boom with his back hand and pulls the sail across. Haven’t gotten comfortable with this yet.

Practice on land, just mast and boom.
Always with balance.
Slide front hand close to mast. As you let go of back hand, give a quick light pull across your body with front hand. This speeds rotation.
Add sail as you get better...always with balance.

That's not a special foil grab....just a common way to flip a sail without ever releasing it completely. Tony just happens to be reaching under to the overhand grip. Works with over to overhand and under to underhand, too, if that's you.
Alternatively, both hands can come off briefly (boom to boom) as it spins before you grab it on the other side. The sail will spin more on-axis and in front of you. Super quick and easy when you get the feel. Again, rider's choice and/or condition-dependent...just like finning.
Dllee's advice to "give a quick light pull across your body with front hand" is HUGE. A firm pull spins it faster.

Funny. I cannot flip the sail any good on foil.
On a 85 liter board and 5.0 in 22 mph, I plane out easily 75% if not better.
Better percentage with 100 liter boards and 6.0.
Foil board is wobbly and there is little wind to assist.
